Nightlife Rooftop Manager - The Grayson

Summary: The Nightlife Rooftop Manager is responsible for the overall management and operation of the rooftop bar, BAR CIMA. The Nightlife Rooftop Manager is responsible for overseeing the nightly operations of a high-energy rooftop venue, ensuring exceptional guest experience, driving revenue, and managing staff effectively. This role requires a dynamic leader with strong hospitality skills, experience in nightlife operations, and the ability to create a vibrant, upscale atmosphere while maintaining operational efficiency. This role encompasses staff supervision, staff training, upholding service standards, event strategic planning, and the execution of marketing initiatives to maximize revenue while maintaining high service standards in an upscale environment. While BAR CIMA will be the focus, the ideal candidate must be comfortable working in a multi-unit establishment and with late-night operations (closing 5 nights a week). The manager will need to ensure efficient workflow and adherence to Company policies and local, state, and federal labor regulations. 

Bar Cima Hours of Operation:

  • SUNDAY 5PM - 10PM
  • MONDAY - SATURDAY 5PM - 12AM

Responsibilities:

  • Recruit, train, and lead a diverse team of bartenders, servers, and support staff to deliver exceptional service.
  • Create staff schedules that accommodate peak service times and special events.
  • Conduct regular training sessions on cocktail preparation, guest service, and safety protocols.
  • Monitor and assess employee performance by providing consistent coaching and performance reviews and address any employee concerns.
  • Cultivate a vibrant and inviting atmosphere, ensuring a high level of guest satisfaction.
  • Interact with guests to gather feedback and enhance the overall experience.
  • Report guest feedback and implement guest recovery strategies in partnership with hotel management.
  • Record nightly activity in Avero logbook, looking for the daily WOW moments. 
  • Execute a unique and engaging cocktail menu that reflects seasonal trends and local flavors.
  • Manage daily operations, ensuring efficient service delivery and adherence to operational standards and procedures.
  • Oversee the cleanliness and organization of the rooftop bar area, lounge seating, and outdoor spaces.
  • Implement and enforce standard operating procedures (SOPs) to maintain consistency in service.
  • Maintain optimal inventory levels for spirits, mixers, and bar supplies, placing orders as needed.
  • Monitor and control costs, optimizing profitability while minimizing waste.
  • Prepare detailed financial reports, analyzing sales data to inform business decisions.
  • Implement innovative marketing strategies to attract new clientele, including collaborations with local influencers, special events, themed nights, and seasonal promotions to enhance guest engagement. 
  • Partner with local businesses and organizations for cross-promotional opportunities.
  • Ensure compliance with all relevant health, safety, and alcohol service regulations.
  • Maintain accurate documentation for liquor licenses and health inspections.
  • Train staff on responsible alcohol service and emergency response procedures.
  • Regularly assess the quality of beverages and food, ensuring consistency in taste and presentation.
  • Build and maintain relationships with local vendors, promoters, and community organizations.
  • Represent the rooftop bar at local events and networking opportunities to enhance brand visibility.
  • Develop protocols for handling emergencies, incidents, and unruly guests to ensure guest and staff safety.
  • Quickly and effectively resolve conflicts and complaints, maintaining a positive environment.
  • Implement, enforce, and ensure compliance with Company standards, policies, and procedures.

Must Haves:

  • 3+ years in a managerial role in a hotel bar & lounge setting.
  • Must be willing to work closing shifts 5 nights a week.
  • Knowledge of POS (Micros or similar)
  • Timekeeping and Scheduling (Hot Schedules or similar)
  • Knowledge of food safety and health regulations
  • Customer-centric
  • Ability to effectively handle employee relations.
  • Acute business & financial acumen
  • Knowledge of regulatory compliance requirements with wage & hour, scheduling, etc.
  • Ability to work flexible hours, including evenings, weekends, and holidays.
